It’s Not Just January, It’s Veganuary!

January heralds the rise of “Veganuary” – a month-long challenge to exclusively eat plant-based foods. In Denver, where plant-based living is not a new concept, the vegan culinary scene truly thrives. Here, from 5280, five of the best vegan restaurants across the metro area…

  • The Corner Beet (1401 N. Ogden St.) – Come for the superfood latte, stay for the Mediterranean-inspired “night plates.” This eclectic, bohemian spot offers a full menu of local, organic ingredients. While vegetarian in scope, The Corner Beet can customize nearly any dish to be vegan (as well as gluten-free and soy-free, too)! 
  • Gladys (5505 W. 20th Ave) – Located inside the Edgewater Public Market, the motto here is “plants forever.” The menu changes with the growing seasons to reflect what’s fresh. Vegan insider tip: While you’re at the Edgewater Market, also check out Meta Burger, featuring award-winning plant-based burgers, as well as Konjo and Arepas House, offering some vegan options.
  • Fellow Traveler (3487 S. Broadway) – With a unique menu of global spirits, this restaurant also features more than a dozen vegan dishes – from chilaquiles, to banh mi, to Mongolian tofu. 5280 highly recommends the weekend brunch.
  • Somebody People (1165 S. Broadway) – This Mediterranean-influenced restaurant is one of the more buzzed-about vegan eateries, with 5280 saying that “herbivores and omnivores alike will dig the menu.” Conde Nast Traveler writes, “At this exceptional vegan restaurant, the cuisine is polished, the vibe is hip and lighthearted, and the service is smooth.”
  • Vegan Van (3900 Elati St.) – Located inside the market at The Assembly, this restaurant got its start as a food truck in 2015 before finding this permanent home in 2022. Although it’s technically in a student housing community, Vegan Van is open to all, offering a fast-food-inspired menu with nearly everything made in-house.
